Recipe Time: Coconut Fig Energy Crumble

Need something a little sweet that will give you sustained energy during your day?  Besides Supernola.... try this Coconut Fig Energy Crumble! The powerful effects of Maca and chia seeds give this snack a 1 - 2 punch of energy and deliciousness.

 

Here's the recipe:

- 1 1/2 cups coconut chips

- 6 chopped dried figs (about 1 cup)

- 1 tablespoon chia seeds

- 1 1/2 teaspoons maca powder

- 2 tablespoons non-processed organic honey

 

Instructions:

Blend all ingredients together with a spoon or by hand if you're feeling freaky, break up into crumbles and place on a pan with parchment paper.

Pop it in the oven for about 8 minutes at 350 degrees (watch it! some coconut likes to get too dark too fast!). Let cool completely before taking off the pan to keep those crumbles big. 

That's it! Simple, and delicious. 

Makes about 4 portions.
