Paleo Superfood Pumpkin Spice Bread.

You will not be disappointed. Sometimes you see the word 'paleo' and think, oh it's going to be dry, eggy, or just 'ehh'. But THIS super simple Pumpkin Spice Bread is amazing.  Especially with some of our Pumpkin Spice Cream Cheese spread on top and Goji Spice Supernola. And especially because it is amped up with superfood Have a healthy breakfast or impress your guests this season with a delicious and healthier version of Pumpkin Spice Bread that will energize them!  

Don't have these superfoods handy? Seriously, stock up. If you have hemp protein powder and maca powder handy, it's super easy to give anything a boost by adding one of these superfoods.  

Ingredients

  • 1 1/4 cups cooked pumpkin
  • 4 eggs
  • 1/2 cup coconut oil (melted)
  • 1/4 cup coconut cream
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 2 tsp baking soda 
  • 2 tablespoons coconut sugar
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla extract
  • 1/2 tablespoon hemp protein
  • 1 tsp maca powder

Cook Time: . Serves: 10.

Instructions

  1. Beat eggs and mix in vanilla, coconut oil and pumpkin.
  2. Add in remaining ingredients and mix until combined.
  3. Place in an oiled (or parchment paper lined) loaf pan, and bake at 350 degrees for 55 minutes (oven must be preheated).
